Let’s dive into today’s delicious dish!

 For this week's Khairul Aming-inspired menu, I'm excited to introduce one of Malaysia's beloved foods: Roti Puri Cicah Sardin, or, in English, Puri with Sardine Dip.

The crispy fried puri (Indian flatbread) is served with a tasty sardine dip, prepared from canned sardines in tomato sauce blended with sautéed onions, chilli, and occasionally potatoes.

Although puri originated in India, this Malay innovation with sardine dip is now a local favourite, enjoyed especially at tea time or for breakfast. It is savoury, crunchy, and absolutely satisfying, a fusion meal that can effortlessly merge two countries in one bite!


Roti Puri Cicah Sardin

Puri with Sardine Dip

(A flaky, airy bread served with sardines in tomato-based sauce)

Bahan-bahan:

Ingredients:


·       Tepung gandum

      Wheat flour


·       Minyak masak

      Cooking oil


·       Garam

      Salt 


·       Yis

      Yeast


·       Bawang merah

         Red onion


·       3 ulas bawang putih

         3 cloves of garlic


·       Sardin dalam tin

        Canned sardines


·       Gula

         Sugar


·       Serbuk perasa

        Seasoning powder


·       Cili padi

        Bird’s eye chilli


·       Limau nipis

         Key lime


Roti Puri:

Puri bread:


1.     Masukkan 2 ½ cawan tepung gandum.

Add 2 ½ cups of wheat flour.


2.     Masukkan 2 sudu besar minyak masak.

Add 2 tablespoons of cooking oil.


3.     Masukkan ½ sudu kecil garam.

Add ½ teaspoon of salt.


4.     Masukkan ¾ cawan air.

Add ¾ cup of water.


5.     Masukkan 1 sudu kecil yis.

Add 1 teaspoon of yeast.


6.     Gaulkan semua bahan menggunakan tangan.

Mix all the ingredients with your hands.


7.     Kemudian, tambahkan satu sudu tepung gandum.

Then, add one spoonful of wheat flour.


8.     Uli doh dan biarkan ia rehat selama 30 minit.

Knead the dough and let it rest for 30 minutes.


9.     Selepas itu, ambil doh sebesar bola kecil dan gentel. (taburkan sedikit tepung supaya tidak melekat)

Next, take a small ball-sized portion of dough and roll it. (Sprinkle some flour to prevent sticking.)


10.   Lenyekkan doh menggunakan penggelek sehingga mendapat ketebalan yang sederhana (tidak terlalu tebal dan tidak terlalu nipis)

Flatten the dough using a rolling pin until you get a medium thickness. (not too thick, nor too thin)


11.   Masukkan roti puri tersebut ke dalam minyak yang panas.

 Put the bread into very hot oil.


12.   Goreng sehingga ia mengembang.

Fry until it puffs up.


13.   Renjiskan minyak ke atas doh tersebut.

Splash hot oil on top of the dough while frying it.

 

Kuah Sardin:

Sardine gravy:


1.     Tumiskan satu biji bawang merah bersama tiga ulas bawang putih.

Sauté one red onion with three cloves of garlic.


2.     Masukkan satu tin sardine.

Add one can of sardines.


3.     Hancurkan sardin.

Mash the sardine.


4.     Masukkan garam, gula, dan serbuk perasa.

Add salt, sugar, and seasoning powder.


5.     Masukkan kicap manis.

Pour in sweet soy sauce.


6.     Tambahkan beberapa biji cili padi.

Add a few bird’s eye chillis.


7.     Perahkan sedikit limau nipis.

Squeeze in some key lime juice.

                  

        ALL SET!             


Cook’s Insight

Roti puri is very universal as it is commonly served with sardine tomato sauce. Roti puri can also be served with any amount of dips, such as curry, dhal, or any dip that you like!



Pssst...the key to the crispy and puffy texture of puri is the deep-frying, because of which it puffs up well when deep-fried in hot oil. 



When frying puri, make sure the oil is at the correct temperature (medium-high flame) to get the perfect crispy texture. If the oil is too hot or cold, the puri could become greasy or soggy.
