What's on the menu today?

 Another one of Che Sayang's must-try recipes is Daging Goreng Kunyit, which we translate as Stir-Fried Beef with Turmeric. It's also one of the easiest, quickest, yet you'll often find it on the lunch menu across Malaysia.

It's a favourite among most workers and students as a lunch meal because it's a one-size-fits-all dish comprising protein, vegetables, and taste. It's actually quite simple to make as well, only a few easy steps, and you're done, ready to serve!


Daging Goreng Kunyit

Stir-fried Beef with Turmeric

(A savoury stir-fry of beef sautรฉed with turmeric, garlic, and vegetables)

Bahan bahan:

Ingredients:


·       Daging batang pinang

Sirloin beef


·       Bawang putih

Garlic


·       Halia

Ginger


·       Kunyit hidup

Fresh turmeric


·       Sos tiram

Oyster sauce


·       Kicap lemak manis

Sweet soy sauce


·       Garam

Salt


·       Serbuk perasa

Seasoning powder


·       Cili padi

Bird’s eye chilli


·       Bawang holland

Yellow onion

 

Cara penyediaan:

Method:


1.     Potong daging nipis.

Slice the beef thinly.


2.     Goreng daging di atas kuali.

Stir-fry the beef in a pan.


3.     Kisarkan 4 ulas bawang putih,  ½ biji bawang merah, 2 inci halia, dan 2 inci kunyit hidup. (Msukkan sedikit air)

Blend 4 cloves of garlic, ½ of red onion, 2 inches of ginger, and 2 inches of fresh turmeric. 

(Add a little water)


4.     Panaskan minyak di dalam kuali.

Heat up some oil in a pan.


5.     Tumiskan bahan kisar tadi

Sautรฉ the blended mixture. 

 

6.     Masukkan daging yang telah digoreng tadi.

Add the previously cooked beef.

 

7.     Goreng sehingga pecah minyak.

Fry until the oil separates from the paste. 

 

8.     Masukkan 2 sudu sos tiram.

Add 2 tablespoons of oyster sauce.

 

9.     Masukkan sedikit kicap lemak manis.

Pour in a splash of sweet soy sauce.

 

10.  Masukkan sedikit garam.

Add a pinch of salt.

 

11.  Tambahkan sedikit serbuk perasa.

Add a bit of seasoning powder.

 

12.  Gaul sehingga sebati.

Mix everything well.

 

13.  Masukkan cili padi yang telah ditumbuk.

Add the pounded bird’s eye chilli.

 

14.  Akhir sekali, masukkan hirisan bawang Holland.

Lastly, add slices of yellow onion.

 Here’s a little secret:

A majority of Malaysians adore daging goreng kunyit with some kicap manis (sweet soy sauce) drizzled over it and a side of sambal belacan (chilli and fermented shrimp paste sambal). It gives a quick, sweet, spicy, and umami flavour that is quite compatible with the beef flavour.

Secret for tender beef?
 Want your beef to melt in your mouth? Marinate it with a little soy sauce, turmeric, and a pinch of baking soda. It softens the meat beautifully without changing the flavour.

Turmeric isn't just for colour, it actually contains anti-inflammatory chemicals and adds a slightly earthy flavour that enhances the aroma of the beef.
